Wheat-Free Pizza
I got this recipe from Wheat Belly by William Davis MD, and it's delicious! I've made it several times and the reason it's so great is because it's so versatile-so no matter how you like your pizza you can make it that way! I've changed it just slightly so it's not 100% like he makes it but I really like it!

So what you need:
1 head of cauliflower-this will fill almost 2 pie pans (not pizza pans but pie pans)
1/3 c extra-virgin olive oil
2 eggs 
3c shredded mozzarella cheese or 12oz -I weight the cheese before I shred it, makes it just a little easier
Meat-if its sausage try to get one that isn't cured in sugar or has too many additives in it, same with pepperonie, and you will need to cook the meat (any kind of it) before you add it to the pizza.
Veggies: there is no limit or max amount (bell peppers, onions, mushrooms, tomatoes, spinach, olives and just anything you want!), I just like to chop them up into smaller pieces so it's easier to cut later.
Pizza sauce-this varies for me, but if you need an amount I'd say about 1/2c per pizza pie pan-just start with a jar and you can add as you want. I like pizza sauces with no added sugar in them-your local grocery store should carry a couple. The one I get is sweetened with wine and vinegar.
Seasonings: Basil, Oregano, Black pepper and Parmesan cheese-if desired

Directions:
-First you need to clean the cauliflower and boil it until it get's soft-in my experience it could take about 30minutes. In that time chop your veggies and shred your cheese and stick them back in the fridge to keep cool. 
-When it's almost done preheat the oven to 350F.
-Once the cauliflower is soft, drain the water out of it and mash it up until their aren't big pieces in it. You can use the same pot but be careful of the tools so you don't damage the pot.
-When it's all mashed up add the eggs and oil and one cup of that mozzarella cheese, and mix it all up.
-You can use pie pans or pizza pans or a baking sheet-I've used all but the pizza pan and they turn out great! Carefully oil the pan or pans with some olive oil. This "dough" isn't like normal stuff-it's not a gummy so be careful when you transfer it to the pan. 
-spread out the dough so it's no more than about 1/2" thick
-Put in the oven for about 20 minutes, now would be a good time to cook the meat, if you want to use any
-When it's done pull it out and add your pizza sauce, seasonings, toppings and cheese
-Put back in the oven until all the cheese is melted, about 15 minutes
-Pull back out and let cool then use a spatula to serve, you need a fork to eat it too-It's amazing!
